Spanish chickpea and spinach Recipe
This Spanish dish is known as Potaje de Chickpeas and Espinacas a la Andaluza. However, the chickpea stew in this dish is among the best which I have ever tasted. This recipe needs just thirty minutes to make. Moreover, it is flavorful and is easy to follow.
In Spain, the main meal of the day is called la Comida, and this stew is often served as the main course. It will make a delicious dinner if you wish to serve it with a baguette and a glass of Spanish wine.
Like canned chickpeas, I used jarred Spanish chickpeas to prepare this dish. However, dry chickpeas may also be used. After soaking it in water, you should boil for two to four hours. My liquid of choice was the veggie broth. In any case, water and a veggie bouillon cube are always an option.

Spanish Chickpea Stew: What You’ll Need
Similar to other chickpea meals, this Spanish stew is one of the easiest to prepare. You do not need a lot of equipment. Moreover, all you need is a saucepan and a cutting board.
Ingredients
- Two spoon extra virgin olive oil
- Ten blanched raw almonds
- Three cloves of garlic
- Single onion
- A teaspoon of sweet smoked Spanish paprika.
- Half tablespoon ground cumin 1 gram
- Half cup tomato sauce.
- Two cups cooked chickpeas 400 grams
- Two cups of vegetables.
- A quarter tablespoon of saffron threads.
- Five oz fresh spinach
- Two tbsp finely chopped parsley
- One spoon sherry vinegar
- A pinch of sea salt
- A dash of black pepper
Instruction
Step 1.
Over medium heat, two tablespoons of extra virgin olive oil are added to a large frying pan or stockpot.
Step 2.
Meanwhile, gather 10 blanched raw almonds and Peele three cloves of garlic.
Step 3.
Once the oil is heated, add the almonds and garlic cloves and stir them around for two minutes. As soon as the ingredients are lightly browned. Then you have to remove the pan from the heat, and transfer them to a mortar. After that, you must add two tablespoons of finely chopped parsley and some sea salt. However, you have to mash them together using a pestle mortar and pestle to mix the ingredients
Step 4.
After reheating the same pan over medium heat for two minutes. After heating the pan, add a single onion roughly diced and mix it with the olive oil. One teaspoon should be added after four minutes when the onions have become translucent.
Step 5.
The sweet smoked paprika and half a teaspoon. Stir in the ground cumin quickly. The next step is to add one tablespoon. Then Stir in half a cup of tomato sauce and sherry vinegar. Then it should simmer with the mixture.
Step 6.
When the tomato sauce has thickened after three minutes, add two cups cooked chickpeas and season with sea salt and black pepper. Gently stir the ingredients together. Add two cups of vegetable broth, pinch in quarter tsp of saffron threads, and then add the almond and garlic mixture. Turn the heat to medium-high, combine everything, and bring to a boil. After that, cover the pan with a lid and reduce the heat to low-medium.
Step 7.
In the final five minutes of simmering, remove the cover and add five ounces of fresh spinach. After that, stir to wilt the spinach, turn off the heat, transfer to shallow bowls, and ready to serve.
Storing Spanish Chickpea Stew
- If you are familiar with another dish that calls for chickpeas, freezing them may not be recommended.
- The stewed chickpeas, on the other hand, can be kept in the freezer for up to one month.
- Before eating, place them in a sealed container and defrost them overnight.
- All you have to do is reheat the spinach and chickpeas in the microwave or on the stove, and they will taste delicious.

It is a specific meal to prepare if you cook it on low heat. However, the main ingredients in this stew are chickpeas and spinach. But you may experiment by using other vegetables or spices. You may cook it on high heat if you feel comfortable. Though do not forget to check the pot frequently, as it can spoil very quickly.
What is the difference between chickpeas and garbanzo beans?
Garbanzo beans and chickpeas are the same food. The English word for garbanzo beans is chickpeas which is Spanish. However, we have also changed the Spanish name to its English equivalent, giving us a choice between the two.
